We didn’t have what was needed and we are nto going to the market for a long time….
LONG TIME! So we made do.
They tasted good, turned out a bit like a lumpy oaty nutty chewy Florentine.
They’d be good over ice cream. If we had some.

Silver Palate’s Messed With Oatmeal Cookies
Again, as I thought to make these substitutions, I heard my mom loud and clear saying,
“Don’t mess with the baking recipes until you’ve tried it!”
Of course mom isn’t around to deal with Covid-19.
Preheat oven to 350 degrees; grease the pan with butter.
2/3 c softened butter
1.5 c brown sugar (one reason we ended up with flat cookies)
1 egg
2 T water
1 t vanilla extract
Cream and set aside.
2/3 c wheat flour
1 t cinnamon
1/2 t salt
1/2 t baking soda
In second mixing bowl, combine and then add to the wet mixture
3 C oats (that is 3 cups oats not 3 coats silly,
and the second reason we ended up with flat cookies)
1 c walnuts
1 c dried sweetened cranberries
Obviously add them slowly and mix…. Bake 15-17 minutes.
Do not let them sit or they turn into bricks!!!!
